Chickpea Sandwich | Vegetarian | Healthy | Most Importantly – Yummy!

Here is a real quick Chickpea Sandwich recipe that came in very handy when I was feeling a bit famished. Off course I took the idea from but tweaked it a bit in accordance to what I had in my refrigerator.
I loved it as it is a healthier option as a quick & filling snack when you feel a bit hungry than opening a pack of Lays 😛

The Filling

1 cup/or amount of your choice chickpea (boiled)

1 tomato, chopped
1/2 onion, chopped
1 tablespoon mayonnaise/sandwich spread/thousand island dressing/hummus (your choice)
1 tablespoon lemon juice
salt and pepper to taste

Drain and rinse chickpeas. Pour chickpeas into a medium size mixing bowl and mash with a fork. Mix in tomato, onion, mayonnaise (to taste), lemon juice, salt and pepper to taste.

You can also throw in other vegetables of your choice like celery. capsicum/bell peppers (what I did), spinach, lettuce …whatever you like. 
Take bread of your preference, I used a multi-grain bread. Spread the filling…and…..ta-daaa!!!
